Keto Beef Burrito (with Homemade Keto Tortilla) Recipe

I didn't film a recipe video for this for lack of a better reason other than being too lazy to edit it... However, these keto burrito and keto tortilla recipes are so simple that I promise it would not be a problem.

Keto Beef Burrito Recipe–Ingredients

For the keto rice

- 150g cauliflower

- 1 tsp of lime juice (optional)

For the keto tortilla

(If you don't want to make your own, you can buy keto tortillas here)

- 96 g almond flour

- 1 tsp xanthum gum*(see nots)

- 1 tsp psyllium husk

- 1 tsp aluminum-free baking powder

- 1/4 tsp salt

- 2 tsp apple cider vinegar

- 1 egg

- 3 tsp water

For the filling

- 50g diced tomatoes

- 100g diced onions

- 1 clove of garlic, minced

- 2 red chili peppers, finely chopped

- 1 tsp ground cumin

- 2 tsp red chili powder

- 1/2 tsp salt

- 50g canned pinto beans or black beans

- 30g of roman lettuce or iceberg lettuce chopped

  1. Place the cauliflower in a food processor and set it to chop (not purée. If you are using a blender, put it on a low setting). Chop/blend until they turn into cauliflower rice.

  2. Pat the cauliflower rice dry and combine with the psyllium husk and let sit for 20 minutes.*(see notes) Meanwhile, make the tortilla.

  3. Evenly combine the almond flour, coconut flour, xanthum gum, psyllium husk, baking powder, and salt.

  4. Beat the egg and add it to the dry ingredients along with the apple cider vinegar. Combine and knead until a dough starts to form.

  5. Add the water 1 teaspoon at a time and knead the dough until smooth.

  6. Separate the dough into 4 even parts, around 52g each.*(see notes)

  7. Roll a small pieces of dough into a ball and flatten it. Roll the dough out into circles between 2 pieces of parchment paper to your desired thickness.

  8. Heat a pan then spray some avocado oil. Place in the rolled out tortilla and cook both sides for 30–40 seconds.*(see notes). Set the tortillas aside.

  9. Wipe the pan clean of the oil then stir fry the cauliflower rice for about 1 minutes. Pour the lime juice evenly then stir fry for 1 minute. Sprinkle some parsley and stir fry for another minute.*(see notes). Take out the cauliflower rice and set aside for later use.

  10. In the pan, add the minced garlic, chili peppers, and diced onions. Stir fry until the onions turn slightly translucent, about 2–3 minutes.

  11. Add the diced tomatoes along with some juice and cook for about 1 minute on high heat.

  12. Add the ground beef and stir fry for about 20 seconds, then add the ground coriander, ground cumin, chili powder, and salt. Stir fry for another 5–6 minutes or until the beef is cooked and the juices evaporate.

  13. Assemble your burrito. Lay out the tortilla and start with some rice. Next to the rice, put some lettuce. On top of the rice and lettuce, put some beans between the rice and lettuce. Put a layer of the ground beef on top and wrap the burrito tight.

Keto Beef Burrito Recipe–Notes

  • Remember to use a food-grade xanthum gum, you can click on the link for the same on I got. Note that a lot of xanthum gum sold out there are cosmetic-grade and is not safe to ingest. This is the cheapest food-grade one that I can find on shopee that is not preorder.

  • The psyllium husk makes the cauliflower rice slightly sticker, letting it sit helps enhance this effect and the final product tastes more like rice.

  • This makes 4 small tortillas for me, around 15cm in diameter.

  • The longer you cook it, the harder it will become. So for hardshell tacos, cook both sides for 60–90 seconds then shape it into a taco while it's still hot. Once, it cools down it will harden.

  • Of course, you can use cilantro instead, but I don't like cilantro.
