Best Simple Keto Cookies—Easy Protein Cookies Recipe: Ingredients
Each batch makes about 50–60 cookies using my cookie cutters, the nutrition facts in the photo on the right is the average nutritional value of 1 cookie.
90g oat fiber
35g whey protein* (I used Muscle Dream peanut and classic chocolate protein)
35g powdered allulose* or powdered erythritol
1/4 tsp baking powder
50g butter (room temperature)
1/2 cup milk
1 egg
Egg wash of 1 egg
Oat fiber is 100% carbohydrates but 100% dietary fiber, allulose and erythritol are also 100% dietary fiber but 100% sugar alcohol. Both dietary fiber and sugar alcohol cannot be absorbed by the human body at all and therefore adds up to zero net carbs and zero calories.

In a bowl, sift together the oat fiber, whey protein, powdered allulose, and baking powder. Mix well.
Add the softened butter, milk, and egg. Combine well with an egg beater.
Move the dough to a lightly powdered (with oat fiber) surface and knead lightly until well combined.
Place a piece of parchment paper over the dough* and roll the dough out to around 0.5cm thick.
Cut the cookies with your preferred cookie cutter. Re-roll and cut out cookies as needed. I used these super cute marine animal cookie cutters, I strongly recommend them, they are super cute! Especially the otter one.
Preheat the oven to 180°C/350°F.
Brush a thin layer of egg wash onto the cookies.
Bake for 12 minutes. At 6 minutes, brush on another thin layer of egg wash and rotate the tray 180° then continue baking.
Let the cookies cool and they're ready!

The whey protein in this recipe decides the flavor of the cookies.
I haven't found any powdered allulose on the market, so I took regular allulose and powdered it using a blender. It's okay to use allulose as it is if you are lazy but you would be able to taste some crystalized allulose in the cookies. You can also use powdered erythritol which I did manage to find.
Place a parchment paper over the dough so that it does not stick onto the roller.
