Creamy Spinach Soup (Palak Soup) Recipe

My recent goal is to get Ares to eat more leafy greens. His diet is virtually perfect, but he simply does not like eating "grass". He says he's not a goat. So I have to hide leafy greens and vegetables in various recipes to get him to eat them. And one of his favorite things in the world is creamy soup. He loved this soup and even looked forward to it when I made it!

The spinach in a creamy palak soup is delicious and undetectable. Multiple ingredients used in this dish are also great foods known to help lower visceral fat. Aside from leafy greens, the calcium and vitamin D in milk contributes to lower levels of visceral fat as well. A study published in the US National Library of Medicine National Institutes of Health further found that cumin helps with weight loss, increased insulin sensitivity, and lower cholesterol levels.

What I'm trying to say is that, this is a great dish you can use to trick people into eating heaps of healthy food. Especially for people with high levels of visceral fat.

Creamy Spinach (Palak) Soup Recipe–Ingredients

- 1/2 tsp avocado oil

- 1/2 onion diced

- 2 garlic cloves minced

- 2 red chili peppers (optional)*see note

- 1 bay leaf

- 1/2 tsp ground cumin

- 1/2 tsp chili powder (optional)*see note

- 1 tsp salt

- 1 tbsp chickpea flour*

- 300g spinach chopped

- 2 cups water

- 2 cups milk or coconut milk*

Creamy Spinach (Palak) Soup Recipe–Instructions
  1. In a pot, add 1/2 tsp of avocado oil and sauté the onion, garlic, and red chili peppers until the onions are translucent.

  2. Put in the bay leaf and sauté for another minute.

  3. Add the ground cumin, chili power, and salt. Mix well.

  4. Add in the chickpea flour and sauté until the mixture becomes slightly thick and sticky.

  5. Put in the spinach. Mix well as it cooks until the spinach reduces in size and becomes half cooked.

  6. Pour in the water and milk. Mix well, bring to a boil then cook covered for 5 minutes on low heat.

  7. Remove the bay leaf.

  8. Use an immersion blender and blend until all ingredients are smooth. Alternatively, transfer the contents into a blender and blend until smooth, then transfer back into the pot.

  9. Cook for another minute, uncovered on medium heat.

  • Palak soup is traditionally an Indian dish and there is definitely no chili pepper or chili powder added. I simply like my food spicy and I had to. They are completely optional and Ares actually prefers it without the fresh chili peppers.

  • The chickpea flour helps thicken the soup, alternatively, you can use regular flour or cornstarch if you are not keto.

  • For an even creamier version, you can use 3 cups of water and 1 cup of heavy cream.
