Mala (numbing spicy) braised food is classic Taiwanese street food that we literally cannot live without. But store-bought ones are often greasy with high sodium and sugar content, so let's make it ourselves! It's simple and healthy. You can make anything with this base, braised eggs, vermicelli, noodles, anything!
Simple Healthy Taiwanese Spicy Braised Base Recipe–Ingredients
Seasoning pouch:
- 2 sticks of green onion
- 5 chili peppers
- 2 cloves of garlic
- 3 slices of ginger
- 1 tbsp dry chili pepper seeds
- 1 tbsp Plum Blossoms Sichuan Peppercorns
(You can replace the above 2 with 4 tbsp of Sichuan peppercorns of any type.)
- 1 tbsp mala chili powder
- 3 pieces of Star Anise
- 1 stalk of cinnamon stick
- 1 tbsp of gochujaru
- 1/2 onion
Sauce base:
- 3 liters of water
- 1/4 cup soy sauce
- 1/8 cup rice vinegar
- 1 tsp salt
- 1 tsp erythritol
Simple Healthy Taiwanese Spicy Braised Base Recipe–Instructions
In a dry pan, sear the green onions, chili, garlic, and ginger slices for 1 minute and add in all the spices.
Keep stirring as it cooks to prevent the spices from burning. Sear until the aroma is released and slightly smokes but does not burn, then transfer all the contents in the pan into a seasoning pouch or cheesecloth.
Sear the onion on all sides and place it into the seasoning pouch.
In a pot, add the water and soy sauce, then place in the seasoning pouch. Cook on low-heat.
Add the salt, erythritol, and vinegar.
Bring to a boil then cook covered on low-heat for 30 minutes.
Taste test and see if it need additional salt.
Cover and cook for another 20 minutes.
Then you can cook whatever you want in it and start eating!
