Keto Buffalo Hot Wings Recipe

Keto Buffalo Hot Wings Recipe–Ingredients

For the wings

- 800g chicken wings

- 1 tbsp aluminum-free baking powder (NOT baking soda)

- 1 tsp salt

- 2 tsp garlic powder

For the Buffalo sauce

- 42g grass-fed butter, melted

- 3 tbsp hot sauce (I used 2 tbsp Ghost Pepper Maqaw Empress Hot Sauce, 1 tbsp Smokey Hibiscus Empress Hot Sauce. Read my full review for Empress Hot Sauce→Best Low-Calorie Hot Sauce–Perfect for Simple Recipes

To serve

- ranch dressing

- 2 stalks of celery

Keto Buffalo Hot Wings Recipe–Instructions

  1. Mix the baking powder, salt, and garlic powder evenly.

  2. Placed the chicken wings in a big bowl or plastic bag. Sprinkle the powder over the chicken wings in three parts*(see notes), toss them evenly, and lightly massage them with your hands.

  3. Place on a pan lined with a baking sheet. Cook for 25 minutes in an oven preheated to 230°C/446°F. Flip each piece of chicken, then cook for another 25 minutes. Alternatively, use an air fryer and cook each side for 8 minutes at 200°C/392°F.*(see notes)

  4. In a large bowl, add the brown sugar-flavored erythritol, the warm melted butter, and the hot sauce. Mix well and make sure that the erythritol has fully melted.

  5. Once the chicken wings are cooked, place them in the large bowl. Massage the buffalo sauce into the chicken wings. Make sure that each piece of chicken is well coated.

  6. Chop off the rough end of the celery stalks and chop them into celery sticks around the length of your index finger.

  7. Plate the chicken wings and celery stick with a side of ranch dressing to serve.

Keto Buffalo Hot Wings Recipe–Notes

  • Here, you can use regular erythritol, regular sugar, or regular brown sugar, too. If you use one of the latter two, of course, it would no longer be keto. Brown sugar-flavored erythritol gives the sauce an additional caramel flavor as opposed to flat sweetness. The link that I provided is one of the best keto-sugar products I can find that is available in Taiwan. They have regular and multiple flavors of erythritol, allulose, and L-Arabinose. I have also confirmed with the seller that none of the flavored sugar substitutes contain any regular sugar.

  • You don’t have to use all of it if you have coated the surface of all the wings evenly. I only used about 3/4 of the powder.

  • Cooking the wings in an oven for longer would lead to more crispy wings. Using an air fryer would create more juicy wings. You can choose your own preferred method.
